Ingredients2 large egg yolks
2 large whole eggs
5 tablespoons granulated sugar
1/2 teaspoon vanilla extract
3 1/2 ounces (1 bar) chopped dark chocolate
5 tablespoons butter
4 teaspoons unsweetened cocoa powder
4 Tablespoons flour
1/8 teaspoon salt
Fresh fruit, powdered sugar and/or mint (for garnish)
Instructions
- Generously grease four 5-ounce ramekins with butter or non-stick cooking spray
- Fill a small saucepan half way with water and bring to a boil
- In a glass bowl, combine chopped chocolate and butter and place on top of saucepan
- Stir chocolate until melted, then remove bowl from heat
- In a bowl, combine eggs, egg yolks and sugar. Whisk with a mixer or by hand until the mixture is pale yellow
- Add melted chocolate to egg mixture slowly while mixing. Mix in vanilla
- Sift cocoa powder and flour into batter and add salt. Mix to combine
- Pour batter into individual ramekins and cover with plastic wrap
- Refrigerate ramekins for 30 minutes
- Preheat oven to 425 F
- Place ramekins in a shallow baking dish and fill dish half way with hot water
- Bake ramekins for 15-18 minutes or until the cake edges start to pull away from the sides
- Allow cakes to cool for 5 minutes then run a knife around the edges to release the sides
- Place a plate over individual ramekins and turn to release. Sprinkle lava cakes with powdered sugar, mint leaves and fresh fruit, if desired
