Recipes: Chocolate Lava Cakes

Let’s face it, going out for Valentine’s Day can be expensive. Desert at a restaurant can be even more expensive and financially can take the fun out of a fun and romantic evening. From P&G Everydayand Home Simple comes a great recipe for Chocolate Lava Cakes. So skip desert, ask for the check at each this delicious treat at home.

Prep Time: 1 hour

Cook Time: 15-18 minutes

Difficulty: Easy

Ingredients2 large egg yolks

2 large whole eggs

5 tablespoons granulated sugar

1/2 teaspoon vanilla extract

3 1/2 ounces (1 bar) chopped dark chocolate

5 tablespoons butter

4 teaspoons unsweetened cocoa powder

4 Tablespoons flour

1/8 teaspoon salt

Fresh fruit, powdered sugar and/or mint (for garnish)

Instructions

  1. Generously grease four 5-ounce ramekins with butter or non-stick cooking spray
  2. Fill a small saucepan half way with water and bring to a boil
  3. In a glass bowl, combine chopped chocolate and butter and place on top of saucepan
  4. Stir chocolate until melted, then remove bowl from heat
  5. In a bowl, combine eggs, egg yolks and sugar. Whisk with a mixer or by hand until the mixture is pale yellow
  6. Add melted chocolate to egg mixture slowly while mixing. Mix in vanilla
  7. Sift cocoa powder and flour into batter and add salt. Mix to combine
  8. Pour batter into individual ramekins and cover with plastic wrap
  9. Refrigerate ramekins for 30 minutes
  10. Preheat oven to 425 F
  11. Place ramekins in a shallow baking dish and fill dish half way with hot water
  12. Bake ramekins for 15-18 minutes or until the cake edges start to pull away from the sides
  13. Allow cakes to cool for 5 minutes then run a knife around the edges to release the sides
  14. Place a plate over individual ramekins and turn to release. Sprinkle lava cakes with powdered sugar, mint leaves and fresh fruit, if desired
